My dealer told me it is very not good to use, say, a "Yamaha" pedal with a Korg keyboard, and that I should only use one from korg. Any basis to what he's saying?

If you need one it works fine.

For basic sustain pedals especially, almost any basic keyboard pedals will work.

Sometimes you may have to switch the polarity, which isn't a big deal...usually a setting within the keyboard or in some cases the pedal has a switch on the bottom...

I routinely use a Roland pedal with my Tyros2 and its just fine...

Shim if you are talking about an expression pedal I bought a Korg EXP2 pedal and it is neither "good nor bad" for my PSR, actually the arranger does not recognize it at all. My Roland expression pedal works fine with Korg but with Yamaha does not work properly even changing the polarity. If you are talking about a foot pedal switch you can use any brand and adapt the polarity if if is necessary.

The EC-5 is the way to go. You can permanently assign the E pad to sustain and still have 4 others for practically any function you want. This way you just need (1) foot pedal under the keyboard. Works great for me.

The EC-5 is not available for the Pa500. It lacks the EC-5 port.
