Nigel has summed it up pretty well there. For me the Wii is the best option. I'm really into the games that deal with WWII like Medal of Honor and Call of Duty. Playing these games on the PS3 and Xbox is ok, but the Wii takes it to a whole n'other level with their user interface. There are numerous 3rd party accessories you can buy for the Wii that add another level of realism.
For the war games you can buy the Wii Zapper and other devices (which I have several of).., and they essentially turn the Wii remotes into a virtual weapon and as the player you feel more into the game. I've got the Zapper and another attachment that makes the Wii remote like a Colt 1911.., and MAN does that do wonders for a realistic experience. It's like an arcade shot em up game on crack! However, with the Wii you have full movement control and much more.
Another VERY cool way the Wii's allow you to really experience realistic play is a game called Blazing Angels (one that I also have)... It's a WWII fighter pilot game.., but this game turns the Wii (nunchuck-smaller palm controller) into the planes control stick! You literally FLY THE PLANES using the nunchuck.., VERY COOL AND REALSITIC!
I also enjoy the golf games, and even have games to play pool, fish, and hunt. My daughter has tons of games on the Wii and so does my wife. My wife has the Wii Fit, but NEVER uses it
I learned real fast to not bring that issue up with her....
**Another very cool game to mention for the Wii "live experience" is the Tiger Woods Golf... Sweet Mary....!!! You literally swing the controller like a golf club
You even putt on the green by holding the controller like a putter. Plus with the TW Golf games the controllers even read your swing speed and how far back you draw on your swing! How crazy is that
