Scott, I suspect the video was recorded using a standard video recorder, something similar to the El-Cheapo Alesis I purchased, and the vocal audio was recorded on a separate device, then combined during the post production process.

My sister's family (cajun) is in Lafayette, LA so I've had the pleasure of a few authentic cajun crawfish boils.
They spread newspaper right out on the table. Messy, spicy and Yummy!.
Only problem is you've got to go thru a dozen of those little buggers to equal a normal bite size amount.

I'm married to a 100% Cajun. She taught me how to eat Crawfish 33 years ago. Before that I used 'em for fish bait back on the Reservation.
One of the Mexican restaurants here, Nicky's (where I play music sometimes) has Crawfish Enchiladas. Way better than they sound!
