Playing instruments the way they should be played and sound on an arranger is an art form all by itself you can't play a trumpet like a piano for example something to think about very seriously when you're playing.
Totally! This is actually an art form on any platform including music scores...unless it's intended to be performed in a certain way. Even Beatles used polyphonic Mellotron flute patches that were played like a keyboard! They could've easily hired a flute choir but they liked that sound.
In my case, I heavily gravitate towards Piano because that's my comfort zone. When I improvise, as soon as I run out of ideas I use Piano techniques as lifeline to get myself out of trouble, so mindset has everything to do with it. I need to be more efficient with assignable switches for sure.
Also it's way harder to turn off the Style features and try to sound authentic without automatic accompaniment running in the background. On top of instrument specific articulations and characteristics, you also have to think about everything else.
