Hi baluan,
even though I have not played both boards, I heard have heard both of them.
The 3000 is lightyears ahead of the 2100. It has Megavoice technology and sounds much more realistic and closer to the Tyros1.
Here are some media clips of the Psr-2000. I couldn't find any for the 2100, but it's close enough to give you an idea: http://www.yamaha.com/yamahavgn/CDA/ContentDetail/ModelSeriesDetail/0,,CNTID%253D2368%2526CTID%253D205500%2526CNTYP%253DPRODUCT,00.html
And here are some media clips for the 3000 for comparison: http://www.yamaha.com/yamahavgn/CDA/ContentDetail/ModelSeriesDetail/0,,CNTID%253D28337%2526CTID%253D205500%2526CNTYP%253DPRODUCT,00.html
As Eddie said it: you can adjust all kinds of things with the EQ. The 3000 has more MB of sound. That should actually make the voices sound better.
