The thing is, for writing purposes you don't need this extreme realism. But for the final production.....

An awful lot of writers don't use anything more than a piano or acoustic guitar when writing. Less distraction, and more ability to concentrate on the melody and construction than worry about the 'perfect' violin part! Deal with that when you record the song, not when you write it....
