They both sound AWESOME! Remember, sound is a matter of personal taste.
I looked at a JP8000 when it came out and to be brutally honest, I don't think it is the most flexible synthe around (but then neither was a Minimoog!). Whilst the real time parameter access is great, why did Roland not give us at least a 61 note keyboard with AFTERTOUCH?
The Korg Z1 (which I own) is 500% more powerful as far as synthesis goes. It has 13 different oscillator types covering everything from analogue to physical modelled instrument imitations. It has more polyphony (12 notes expandable to 18), better effects and a nice 61 note velocity/aftertouch keyboard.
The Z1 has not got all it's main synthe parameters set up as real time controls as on the JP but it does still have a great real time control set up with knobs for filters, fliter and amp EG's and 5 assignalbe knobs underneath the LCD. It's X/Y touchpad is awesome (the JP also has a straight ribbon controller).
The Z1 and JP both have flexible arpeggiators but the JP also goes one better with it's RPS function whereby you can assign different riffs to different keys. The Z1's arpeggiator is polyphonic however.
For the sounds you are after, both synthes deliver in spades. The Z1 is also 6 part multitimbral verses the JP's 2 part multitimbrality. However, if you also want the realistic sounds and great EP's, the Z1 has the huge edge.
My advice to you is to play both extensively and don't just go for one over the other because of price or because someone told you one is better than the other. Decide for yourself and let your ears be the judge! Cheers. Korgasm.
