I am not very familiar with the K series synths, but I play a K2500 at church and I would like to control the release in realtime. I am impressed by the many options for controlling things in realtime, but I haven't figured out how to control the release. Some other synths use MIDI cc#72, so you can assign a knob or slider to that and it will do the trick. The K2500 MIDI cc#72 does not control release.

When you edit the program, use the MORE> button until you see the ENVCTL (Envelope Control). On this page you can assign a controller to adjust the release time.

The K25 has some release features built in, try pumping (release/re-engage, ...) the sustain pedal. It works exceptionally well with layered programs such as (but not limited to) piano/strings.
