I was wondering if anyone might know where I could download an instrument definition list for a JP 8000.

go for it ! This is so far the only place i know where you can find a .ins file for the JP-8000. It are 2 files. One for the patches, the other one for the performances (so you will have to use 2 midichannels for the JP, unfortunatly....)
