When I try and record in realtime into the sequencer I will record just one part onto one track but will get other sounds joining in when I play it back. I can't here these other sounds as I'm recording, they only come in when I play it back.

This happens in pattern recording, single and performance sound recording.

Why is it adding other sounds and how do I turn them off.

hi

It appears to be a system problem possibly and I'm afraid more info is required to get to the bottom of it.

1) What are the other sounds you get?
2) Is the XP midi'd up to your pc?

If the sounds are GM and you're connected to a GM soundcard in your PC, I suspect you need to alter your midi settings so as not to transmit on playback or whatever?
A good experiment would be to disconnect the XP's midi cables temporarily and then playback.

If it's not the above then the matter means delving into deeply and more info is required. I'm not at my base where my XP & Manual sit. When I get back to base I'll check the issue out.
