... Any thoughts about using an IPad as a back-up midi player? Software? Sound Card etc? Thanks.

Record all your SMF thru the keyboard using your best sound sets, I personally recorded all my backing tracks using Live Styles & SMF's using my KETRON Sd1+ & Midjay years ago,......saved as Mp3's and play off the iPad or whatever device you like. headphone

Is there a program on the Ipad that will play midi? I thought it was only able to play Mp3.

I am sure it has a limited GM midi player...I own a Archos , it has a decent sounding Midi player, but no options to mute tracks etc..

Do you mean to play MIDI to an external device (like your arranger) or to an internal sound source?

UnReal Book allows a MIDI file or an mp3 (or both?) to be Linked to each .PDF you display. So one call to the iPad calls up the chart or lyrics, the SMF for the song (or a simple header SMF that calls up the Performance you want) or the mp3 backing.
