You can adjust volume and pan before recording; you cannot edit the recorded sequence.

Okay next question:

Can I do what I need to do on the EXR-5?

No. You can change track volume (but not pan) on EXR-7.

You can only change volume and pan for complete arranger PARTS, not for each midi-channel seperately. And even that is as user-unfriendly as it gets. (Going into instrument setup, push buttons lots and lots of times to reach the settings you want to change. A real drag.)
